WAIKIKI, Hawaii - The holiday season is the busiest time of the year for many businesses- and additionally, Sunday, December 15th happens to be National Cupcake Day! We stopped by one bakery in Waikiki gearing up for the holiday rush- The Halekulani Bakery & Restaurant, located at Halepuna Waikiki.

Executive pastry chef Mark Freischmidt takes a little time out of a hectic morning to talk about his bakery's operations. The bakery bears the name of Halepuna Waikiki's sister hotel, Halekulani. It's the first branded Halekulani food and beverage outlet.

The bakery opened in the fall and is a one-stop shop for artisan breads, pastries, cakes, chocolates, and coffee. For the holidays, Freischmidt and his team are making special Stollens, a traditional German bread full of nuts, spices and candied fruit, coated with powdered sugar, just in time for the holidays.

"The holiday season are the hotels' busiest time of the year so we are anticipating higher volumes not only for guests, but also for patrons coming in to try our bakery," he adds.
