Red 'Wet' Sauce

This makes any burrito into something special.Ingredients: 2 TBS olive oil 1/4 red onion, chopped 1/2 yellow bell pepper, sliced 1 clove garlic minced (if you want it spicy, add jalepeno pepper) 2 large vine ripe red tomatoes 1/2 cup veggie "chicken" broth Directions:
Heat oil in a pan, add onion, garlic, yellow pepper and saute until soft.Add chopped tomatoes. Add broth and simmer a few minutes until the vegetables are cooked and soft.
Season with salt and pepper.
Puree in a blender until smooth and use this to smother your burrito.
