AMERICAN SHRIMP GRILL

Here’s a sandwich that’s sure to please the seafood-lovers in your family. Serve with shredded lettuce dressed with creamy Italian dressing for a satisfying light meal.
8 slices Sara Lee Soft & Smooth Whole-Grain White Bread
3 tablespoons tartar sauce
4 slices American cheese
8 thin tomato slices
Dash of salt and freshly ground pepper
24 cooked shrimp (#44), shelled, deveined, and halved lengthwise
3 tablespoons seafood cocktail sauce
Butter for spreading
For each sandwich, spread 1 slice of Soft & Smooth bread with about 2 teaspoons tartar sauce. Add 1 slice of cheese and 2 tomato slices; sprinkle with salt and pepper. Arrange a layer of 6 halved shrimp. Spread another slice of bread with cocktail sauce, and close the sandwich, cocktail-sauce-side down. Lightly spread the outside of both bread slices with butter.
Brown both sides of the sandwiches on a stovetop grill pan or in a skillet over medium-high heat. You can use a smaller skillet to place pressure on the sandwiches to ensure that the cheese melts and the bread browns evenly. Or, use a panini grill, which will brown both sides at once.
