(With No Chicken And No Cheese)

This is a vegetarian, no dairy version.
To make "Gee Whiz" sauce:
1 can Great Northern Beans (rinsed and drained)
1/2 cup pimientos or roasted red bell peppers
6 tbsp. nutritional yeast (not baking yeast- this is yellow flakes from Down To Earth)
3 tbsp. fresh lemon juice
3 tbsp. Tahini (sesame paste- available at health food stores)
1/2 tsp. salt
1/2 tsp. onion powder
1/2 tsp. yellow mustard
Blend everything in a food processor until smooth.
For the Macaroni:
2 cups (uncooked) Quinoa Macaroni elbows (I got these from bulk food section of Down To Earth)
1 cup Gee Whiz sauce (see above)
1/2 to 1 cup Hawaiian Healthy Gourmet Soy Chicken Chunks reconstituted (soy chicken is available at Down To Earth)
1/4 cup Rice Dream regular rice milk
Salt and pepper to taste
Reconstitute the soy chicken by simmering in water for about 6 minutes. Cook the Quinoa macaroni in boiling water for 6-7 minutes, until tender. Drain macaroni and place in large bowl. Add 1 cup Gee Whiz "cheese" substitute. Add soy chicken chunks.
Add rice milk. Mix well and serve warm.
