Homemade Spinach Linguini

Dick Allgire CooksYou need a juice machine and a pasta machine to make this delicious fresh pasta. It's worth the effort.

Ingredients
  • 1/2 bunch fresh spinach, rinsed
  • 3 tsp. EnerG egg replacer, mixed with 2 or 2 tbsp. water
  • 1 cup unbleached white flour
  • 1 cup semolina flour (I got both flours at the bulk bins at Down To Earth)
  • In a large bowl, combine flour with EnerG egg replacer mixture. Juice the spinach, which should make about 1/2 cup fresh spinach juice.

    PastaAdd spinach juice to flour and mix well. If this is not enough liquid to form a dough, add water. Mix and continue to adjust water/flour mixture until the dough is pliable but not sticky. Knead the dough for 5-10 minutes. Cut into pieces and roll through the pasta machine.

    Cook the fresh pasta in rapidly boiling salted water for 2-3 minutes. Serve with your favorite low-fat spaghetti sauce.
