Avocado-Tomatillo Salsa

Avocado-Tomatillo SalsaThis is great as a dip, or on quesadilla. This will keep for several days in an airtight container in the refrigerator.

Ingredients:
  • 2 ripe medium avocados, diced
  • 2 tsp diced red bell pepper
  • 2 tsp diced green bell pepper
  • 1 tbsp. sliced green onion
  • 4 tomatillos, husked, and diced (I got mine at Safeway)
  • 1 clove garlic, minced
  • 2 tbsp. chopped cilantro
  • 2 serano chiles, seeded and minced
  • 2 tsp. fresh lime juice
  • 3 tbsp. olive oil
  • Instructions:
    • In a large bowl, combine avocados, bell peppers, green onion, and half the tomatillos. Stir to mix.
    • In a blender or food processor, placed remaining tomatillos.
    • Add garlic, cilantro, chiles, and lime juice. Process until smooth.
    • Drizzle in oil and continue to blend.
    • Add puree to vegetables in a bowl and mix.
    • Salt to taste.
    • Let sit 30 minutes before serving.
