Avocado-Tomatillo Salsa
This is great as a dip, or on quesadilla. This will keep for several days in an airtight container in the refrigerator.
Ingredients:
- In a large bowl, combine avocados, bell peppers, green onion, and half the tomatillos. Stir to mix.
- In a blender or food processor, placed remaining tomatillos.
- Add garlic, cilantro, chiles, and lime juice. Process until smooth.
- Drizzle in oil and continue to blend.
- Add puree to vegetables in a bowl and mix.
- Salt to taste.
- Let sit 30 minutes before serving.
