Gourmet Cole Slaw

Asian Slaw Start by making a soft tofu dressing:

  • 1/2 tsp. fresh ginger, grated
  • 8 oz. Kanai brand Gourmet Soft Tofu (this is a new style of soft tofu, with a light green tint and sweet creamy texture)
  • 1 tsp. salt
  • 1/4 cup water
  • 1 tbsp. sesame oil
  • 2 tbsp. brown rice vinegar

Combine ingredients in a blender and puree until smooth.

I used one package of Cabbage "Salad Mix" from Tropic Fish & Vegetable Market just off Ward Avenue across from Ward Warehouse. The package costs 79 cents. You can, of course, make your own mix of cabbage, watercress, and sliced raddish.

I mixed the tofu dressing with one package, and added sliced green olives.
