Pasta With Lobster Mushrooms

Ingredients:

  • 1 package dried lobster mushrooms (I got these at Star Market hanging above the lettuce in the produce section. They are also available at Down To Earth)
  • 2 cloves garlic, minced
  • 1/2 package spaghetti or other type of pasta
  • 3 links of Yves brand Veggie Breakfast Links, chopped into large slices (or your choice of vegetarian sausage)
  • 1 jar of your favorite low-fat spaghetti sauce

Soak the lobster mushrooms in hot water for about 15 minutes. Save the liquid...it is full of flavor.

Saute the garlic and reconstituted mushrooms in a few tablespoons of the reserved soaking water.

Add chopped veggie links and continue to saute briefly.

Add the spaghetti sauce, mix and heat through.

Add to cooked pasta.
