Spicy Thai Tofu Salad

When I saw this demonstrated in Thailand they used grilled pork. We substituted baked tofu.

Thai VegetableIngredients:
  • 6 oz baked tofu- Oriental style, sliced
  • 1 medium onion, sliced
  • 1 Japanese cucumber, sliced
  • 1/2 red bell pepper julienne thinly
  • 2-4 hot Hawaiian or Thai chili peppers, chopped
  • 4 cloves garlic, minced
  • 2 TBS fish sauce (or vegetarian version use soy sauce)
  • 2 TBS fresh lime juice
  • 1 TBS sugar
  • Instructions:
    1. Make the dressing by mixing chili pepper, garlic, fish sauce, lime juice and sugar.Stir to mix and taste. You can adjust seasonings to make it hotter or sweeter.
    2. Toss the sliced tofu, cucumber, and onion. Add sauce and mix well. Garnish with red bell pepper slices and Chinese parsley.
