Scallion Laced Sesame Peanut Noodles

Serve warm or cold. These are a great side dish or snack.

Scallop Peanut Sauce NoodlesIngredients:
  • 1/2 pound thin spaghetti or vermicelli
  • 2 TBS toasted sesame oil
  • 1/4 cup crunchy peanut butter
  • 2 TBS rice vinegar
  • 1 1/2 TBS soy sauce
  • 1 tsp honey
  • 10 green onions, sliced
  • 2 cloves garlic, minced
  • 2 tsp fresh ginger minced
  • 1/4 tsp red pepper flakes
  • Instructions:
    1. Cook pasta noodles per instructions, then drain. Toss with 1 TBS sesame oil. Set aside.
    2. In small bowl, combine peanut butter, vinegar, soy sauce, honey, and 1 TBS water and whisk until smooth. Thin with extra water if necessary. Set aside.
    3. Thinly slice 5 green onions. In small pan saute 1 TBS sesame oil and green onions about 3 minutes, until onions are soft. Add garlic and ginger and pepper flakes, and cook 30 seconds. Add mixture to pasta noodles.
    4. Pour peanut butter mix over noodles and toss. Add remaining green onions, toss and serve.
