Scallion Laced Sesame Peanut Noodles

Serve warm or cold. These are a great side dish or snack.
Ingredients:
1/2 pound thin spaghetti or vermicelli
2 TBS toasted sesame oil
1/4 cup crunchy peanut butter
2 TBS rice vinegar
1 1/2 TBS soy sauce
1 tsp honey
10 green onions, sliced
2 cloves garlic, minced
2 tsp fresh ginger minced
1/4 tsp red pepper flakes
Instructions:
Ingredients:
- Cook pasta noodles per instructions, then drain. Toss with 1 TBS sesame oil. Set aside.
- In small bowl, combine peanut butter, vinegar, soy sauce, honey, and 1 TBS water and whisk until smooth. Thin with extra water if necessary. Set aside.
- Thinly slice 5 green onions. In small pan saute 1 TBS sesame oil and green onions about 3 minutes, until onions are soft. Add garlic and ginger and pepper flakes, and cook 30 seconds. Add mixture to pasta noodles.
- Pour peanut butter mix over noodles and toss. Add remaining green onions, toss and serve.
