Creamy Chicken And Mushroom Pasta

To make the cheese sauce:
Ingredients: Gee Whiz:
1 can Great Northern beans, rinsed and drained
1/2 cup roasted red bell pepper (comes in jars packed in water)
3 TBS tahihi (sesame butter) get this at health food stores
6 TBS nutritional yeast (big yellow flakes) get a bulk section of health store
3 TBS lemon juice
1 tsp salt
1 tsp onion powder
1 tsp yellow mustard
Instructions:
Blend everything in a food processor until smooth.
Ingredients: pasta sauce:
1 TBS olive oil
1/2 lb chicken seitan We used White Wave brand from cold case at Down to Earth
1/2 lb mushrooms sliced
1 cup Gee Whiz (recipe above)
1/2 to 1 cup rice milk or soy milk
salt and pepper to taste
Pasta (We used Eden Organic Saffron Ribbons) but you can use any kind of spaghetti.
Instructions:
- Brown the chicken seitan and mushrooms in oil over medium high heat in a large not stick skillet. Add the Gee Whiz cheese mixture. Add the rice milk, heat and mix well.
- Serve over cooked pasta.
