Japanese Carrot Dressing

This really is a great dressing. And very easy to make.
Ingredients:
1 small carrot, shredded (about 1/2 cup)
2 TBS Mirin
2 TBS rice vinegar
1 TBS soy sauce
1/2 tsp sesame oil
1 TBS fresh grated ginger
3 ounces silken tofu
Instructions:
Put everything in a blender and mix until smooth. Store chilled in a covered jar.
*Dick used a Benriner turning slicer he bought from Daiei to cut vegetables for the salad.
