Japanese Carrot Dressing

This really is a great dressing. And very easy to make.

Japanese Carrot DressingIngredients:
  • 1 small carrot, shredded (about 1/2 cup)
  • 2 TBS Mirin
  • 2 TBS rice vinegar
  • 1 TBS soy sauce
  • 1/2 tsp sesame oil
  • 1 TBS fresh grated ginger
  • 3 ounces silken tofu
  • Instructions: Put everything in a blender and mix until smooth. Store chilled in a covered jar.

    *Dick used a Benriner turning slicer he bought from Daiei to cut vegetables for the salad.
