Tomato Miso Sauce

This goes well over noodles.
Ingredients:
2 TBS water or 1 TBS olive oil
1/2 onion diced
1/2 cup carrot diced
1/2 cup celery diced
1/4 cup sweet red pepper, diced
2 cloves garlic, chopped
3 cups chopped fresh (or 28 ounces canned) tomatoes
5 ounce can tomato paste
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/8 tsp black pepper
2 TBS miso
2 TBS water
2 TBS sugar
1/4 tsp salt
Instructions:
Ingredients:
- In a pan over medium heat, saute onion, carrot, celery, pepper, and garlic in 2 TBS water, adding more water if needed (or two TBS olive oil) for 5 minutes.
- Stir in tomatoes, tomato paste, basil, oregano, and pepper. Cover, reduce heat and simmer 20 minutes.
- Mix miso and water to form a paste, then stir into sauce with the sugar. Heat and adjust seasoning.
