Tomato Miso Sauce

This goes well over noodles.

Miso Tomato SauceIngredients:
  • 2 TBS water or 1 TBS olive oil
  • 1/2 onion diced
  • 1/2 cup carrot diced
  • 1/2 cup celery diced
  • 1/4 cup sweet red pepper, diced
  • 2 cloves garlic, chopped
  • 3 cups chopped fresh (or 28 ounces canned) tomatoes
  • 5 ounce can tomato paste
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/8 tsp black pepper
  • 2 TBS miso
  • 2 TBS water
  • 2 TBS sugar
  • 1/4 tsp salt
  • Instructions:
    1. In a pan over medium heat, saute onion, carrot, celery, pepper, and garlic in 2 TBS water, adding more water if needed (or two TBS olive oil) for 5 minutes.
    2. Stir in tomatoes, tomato paste, basil, oregano, and pepper. Cover, reduce heat and simmer 20 minutes.
    3. Mix miso and water to form a paste, then stir into sauce with the sugar. Heat and adjust seasoning.
