Lemon Sesame Cookies

These are delectable cookies, a moist cake-like texture and lemon sesame flavor.

Ingredients:
  • 2 cups unbleached or all purpose flour
  • 1/2 cup sesame seeds
  • 1/4 cup wheat germ
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 12 ounces soft tofu
  • 1/2 cup maple syrup
  • 1/2 cup sunflower or canola oil
  • 1/4 cup sugar
  • 1 1/2 tsp lemon extract
  • 1 tsp vanilla extract
  • 1 - 2 tsp grated lemon peel
  • Instructions:
    1. Preheat oven to 350 degrees. Combine flour, sesame seeds, wheat germ, baking powder, and salt in a bowl.
    2. In another bowl, mash tofu well. Stir in maple syrup, oil, sugar, lemon extract, vanilla, and lemon peel.
    3. Stir flour mixture into wet ingredients, mixing quickly. Drop by teaspoonfuls onto oiled baking sheet.
    4. Bake for about 12 minutes until golden brown, rotating baking sheet every 5 minutes for even baking. Remove to rack to cool. Store in covered jar.
    5. Makes 36 cookies
