Black Bean And Papaya Salad

This is the kind of thing I would see reporter Denby Fawcett eating in the lunchroom at KITV. I'm going to make it for her for lunch today. You can also make this into a salsa.
Ingredients:
3 ripe papayas
3 TBS olive oil
3 TBS fresh lime juice
1 1/2 TBS soy sauce
1 tsp cumin
1/2 tsp sugar
1 cup canned black beans, rinsed and drained
4 medium plum or Roma tomatoes, diced
1 fresh jalapeno pepper, minced
2 TBS finely chopped red onion
10 basil leaves, finely shredded
Instructions:
- Cut 2 papayas in half lengthwise and remove seeds.
- Peel, halve, seed and cube the remaining papaya.
- In a large bowl, whish oil, lime juice, soy sauce, cumin, and sugar until well mixed.
- Stir in papaya cubes, black beans, tomatoes, chili pepper, onion and shredded basil.
- Season with salt and pepper. Spoon 1/2 cup salad mix into each papaya half. Serve at room temp with remaining salad mix on the side.
