Ruby was looking for a fried tofu patty recipe, and this is it! Really good.

Ingredients:
  • 1 TBS sesame seeds
  • 15 oz firm tofu, rinsed
  • 5 egg whites (I used EnerG Egg replacer which comes in a box at Down To Earth)
  • 1/2 cup flour
  • 1 TBS grated ginger
  • 1 medium carrot, grated
  • 3 green onions, thin sliced
  • 1/3 cup frozen peas
  • 1 TBS soy sauce
  • 2 tsp sesame oil (more if needed)
  • Sauce:
  • 3 TBS soy sauce
  • 1/2 tsp sesame oil
  • 1/2 tsp rice vinegar
  • 1 tsp sugar
  • optional: chili paste
  • Instructions:
    1. In a small skillet, toast sesame seeds until golden brown. Set aside.
    2. Pat tofu dry and place in a large bowl. Mash with fork until it resembles scrambled or chopped eggs.
    3. Mix in egg whites or egg replacer, flour, ginger, green onions, carrots, peas, soy sauce, and salt and pepper to taste. Blend well.
    4. In a large nonstick skillet, heat sesame oil. Add about 1 / 4 cup of tofu mix per cake to skillet, flatten with spoon.
    5. Cook until golden brown, about 3 or 4 minutes per side.
    6. Make sauce in a bowl, and serve with cakes. Garnish with sesame seeds.
