Southwestern WrapsIngredients:
  • 4 TBS fresh lime juice
  • 1 TBS vegetable oil
  • 1/2 tsp chile powder
  • 8 oz firm tofu, drained, patted dry, crumbled
  • 1/2 cup chopped red onion
  • 1/3 cup fresh cilantro
  • 2 cloves garlic, minced
  • 4 flour tortillas
  • 1 ripe medium avocado, peeled pitted and diced
  • 1 cup salsa
  • 2 cups thin sliced lettuce leaves
  • Instructions:
    1. In a medium bowl, whisk 3 TBS lime juice, oil, and chile powder.
    2. Add crumbled tofu, onion, cilantro, and garlic, toss to blend.
    3. Season to taste with salt and pepper. Let marinate 20 minutes.
    4. Preheat overn to 350 degrees.
    5. Wrap tortillas in foil, heat in oven about 10 minutes. In a small bowl, toss lettuce and avocado with remaining lime juice.
    6. Place tortilla on plate, place layer of lettuce down the middle. Top with tofu mix, spoon a bit of salsa, roll up and serve.
