Healthy Breakfast Hash

hashThe typical American or island style breakfast is real disease promoter -- bacon or sausage and eggs. This is a filling dish that will keep you going strong until lunch.

Ingredients:
  • 2 pounds small white potatoes, unpeeled and cut into 1 inch dice
  • 2 TBS olive oil
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 2 bell peppers, preferably red or yellow, chopped (2 cups)
  • 1 1/2 TBS fresh chopped rosemary
  • 8 small soy "sausages" (I love Yves brand Veggie Breakfast Links)
  • 4 oz. fresh baby spinach, coarsely chopped
  • Chipotle powder (optional)
  • Instructions:
    1. I a large pot, put potates and add enough cold water to cover.
    2. Bring to a boil, then reduce heat, and simmer until potatoes are almost tender, 10 to 12 minutes. Drain and cool.
    3. In a very large heavy skillet, heat oil over medium-high heat. Add onion, and cook, stirring often, until beginning to soften, 5 minutes.
    4. Add potatoes, and cook, stirring occasionally until crispy and brown, about 10 minutes.
    5. Add garlic, bell peppers, rosemary and "sausage." Cook, stirring until peppers soften, about 10 minutes.
    6. Stir in spinach, and cook until the spinach wilts down.
    7. Salt and pepper to taste, add chipotle powder if desired. Serve hot.
