Thai Green Curry

I have always been afraid to try making Thai food at home. It is easier to get it from a Thai restaurant. But this one is pretty easy, and it does taste authentic. Warning: it is pretty spicy.
Ingredients:
1/2 to 1 TBS Thai Kitchen Green Curry Paste
(They have this at Down To Earth and I believe Times)
1 can coconut milk
1/4 cup fresh basil
2-3 TBS Thai fish sauce
(for vegetarian use Braggs Liquid Amino or Soy Sauce)
2 TBS brown sugar
1/3 cup veggie "chicken broth"
1/4 cup bamboo shoots
8 ounces chopped vegetables: eggplant, carrot, broccoli, green beans
On the TV segment I also added a few chunks of "chicken" style tofu, which I got at Down To Earth
Instructions:
Ingredients:
- Combine green curry paste with coconut milk in a medium saucepan.
- Simmer 5 minutes.
- Add basil, bamboo shoots, fish sauce or soy sauce, brown sugar and veggie broth.
- Add veggies and simmer 10-15 minutes.
