Grilled Vegetable Salad

Grilled Vegetable SaladI used a special "grill pan" for this recipe. It is a pan with built in grooves that cooks food like a grill on your stovetop. You can buy these at any kitchen store. There are heavy iron pans for around $100, or cheaper aluminum with non stick surface for much less. Good Christmas idea!

Vegetables for Grilling:
  • Sliced zucchini
  • Sliced red bell pepper
  • Asparagus
  • Yellow squash, sliced
  • Oil for grilling:
  • 2 tbsp. olive oil combined with 1 tsp. dry rosemary
  • Brush rosemary infused oil on the sliced vegetables and grill them for about 4 minutes on each side, until they become slightly soft and the blackened grill marks appear. Remove from heat, and julienne.

    Salad dressing: (You can use your favorite dressing, or try this)
  • 2 tsp. dijon mustard
  • 1 tbsp. sugar
  • 4 tbsp. balsamic vinegar
  • 3 tbsp. olive oil
  • Blend until smooth.

    Salad: butter lettuce or any type of lettuce you like, tossed with some baby mixed greens. Toss the lettuce and greens with the dressing. Transfer to plate and top with julienned roased veggies.
