Bread Pudding

This is a healthy version of a favorite dessert. We substituted the whole milk, butter and eggs with healthier ingredients.

Bread PuddingIngredients:
  • Energi-Egg replacer (equivalent of 6 eggs)(powder plus water) Buy this in a box at Down To Earth or other health food stores
  • 5/8 cup sugar
  • 1/8 tsp salt
  • 3 cups hot soy milk
  • 1 1/2 TBS margarine (Earth Balance)
  • 1 TBS vanilla
  • 1 TBS cinnamon
  • 1/2 tsp nutmeg
  • Diced Bread (sour dough is great) enough to almost fill 8x8" pan
  • 1/2 cup raisins
  • 1/2 cup chopped pecans
  • Instructions:
    1. Whip together egg replacer, sugar and salt.
    2. Add soy milk, margarine, vanilla, cinnamon and nutmeg until well blended.
    3. Place bread and raisins in pan.
    4. Pour in the "egg" mixture and use a potato masher to gently squeeze the bread to make it soak up the liquid.
    5. It is important to make sure the bread is completely saturated, with all the air in the bread filled with liquid.
    6. Bake at 325 degrees for about 40 minutes, until set and browned.
