Bread Pudding

This is a healthy version of a favorite dessert. We substituted the whole milk, butter and eggs with healthier ingredients.
Ingredients:
Energi-Egg replacer (equivalent of 6 eggs)(powder plus water)
Buy this in a box at Down To Earth or other health food stores
5/8 cup sugar
1/8 tsp salt
3 cups hot soy milk
1 1/2 TBS margarine (Earth Balance)
1 TBS vanilla
1 TBS cinnamon
1/2 tsp nutmeg
Diced Bread (sour dough is great) enough to almost fill 8x8" pan
1/2 cup raisins
1/2 cup chopped pecans
Instructions:
Ingredients:
- Whip together egg replacer, sugar and salt.
- Add soy milk, margarine, vanilla, cinnamon and nutmeg until well blended.
- Place bread and raisins in pan.
- Pour in the "egg" mixture and use a potato masher to gently squeeze the bread to make it soak up the liquid.
- It is important to make sure the bread is completely saturated, with all the air in the bread filled with liquid.
- Bake at 325 degrees for about 40 minutes, until set and browned.
