Fresh Tomato Soup with Herbs

Fresh tomato soup is easy to make with a hand blender. You can also use a food processor or blender.

Tomato SoupIngredients:
  • 1 tbsp. olive oil
  • 3/4 cup chopped onion
  • 2 cloves garlic, chopped
  • 1 tbsp. chopped fresh basil
  • 1/4 tsp. dried thyme
  • 5 cups diced fresh tomatoes ( 2 lbs)
  • 1 1/2 cups vegetable broth
  • 2 1/2 tbsp. tomato paste
  • 2 tsp. sugar
  • Fresh herbs like Rosemary for garnish
  • Instructions:
    1. In a large saucepan, heat oil over medium heat.
    2. Add onion, garlic, basil and thyme, and cook, stirring often until onion begins to soften, about 5 minutes.
    3. Add tomatoes and cooking stirring for 5 minutes.
    4. Stir in broth, tomato paste, and sugar.
    5. Season to taste with salt and pepper.
    6. Bring to a boil. Reduce heat, simmer uncovered 15 minutes.
    7. Using immersion blender, process until smooth.
    8. Ladle into serving bowls and garnish with fresh herbs.
