Light and lemony flavor, this one is cool, crunchy and a snap to make.
Dressing
1 cup soy mayonnaise
3 tbsp fresh lemon juice
2 tsp horseradish
2 tsp rice vinegar or balsamic vinegar
1 1/2 tsp Dijon mustard
1 small clove garlic, minced
1/2 tsp salt
1/4 tsp fresh ground pepper
The Rest
2 cups shredded green cabbage
2 cups shredded red cabbage
2 cups peeled, shredded carrot
2 cups shredded celery root or daikon
1 cup diced red onion
1 cup dried currants or raisins
Make dressing in a medium bowl mix all ingredients until well combined.
In a large bowl, combine both cabbages, carrots, celery root or diakon, red onion and raisins. Add dressing and toss to coat. Season with salt and pepper.
