Confetti SlawLight and lemony flavor, this one is cool, crunchy and a snap to make.

Dressing
  • 1 cup soy mayonnaise
  • 3 tbsp fresh lemon juice
  • 2 tsp horseradish
  • 2 tsp rice vinegar or balsamic vinegar
  • 1 1/2 tsp Dijon mustard
  • 1 small clove garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp fresh ground pepper
  • The Rest
  • 2 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 2 cups peeled, shredded carrot
  • 2 cups shredded celery root or daikon
  • 1 cup diced red onion
  • 1 cup dried currants or raisins
  • Make dressing in a medium bowl mix all ingredients until well combined.

    In a large bowl, combine both cabbages, carrots, celery root or diakon, red onion and raisins. Add dressing and toss to coat. Season with salt and pepper.
