2006 See recipe for veggie broth.Ingredients: 1 TBS vegetable oil 1-2 cloves garlic, minced 2 TBS light miso 1 TBS soy sauce 1 TBS nutritional yeast (Found in bulk food at Down To Earth) 2-3 cups home made broth 1 package Sun Brand saimin noodles Fresh vegetables: chopped bok choy, sliced mushrooms, bean sprouts, sliced onion Instructions: In a pan, heat vegetable oil and sauté garlic briefly. Stir in miso, soy sauce, and nutritional yeast. Add homemade broth, stir well and bring to a simmer. In a separate pan cook noodles per package directions, about 2 min. In a wok stir fry vegetables in a bit of vegetable oil until crispy tender. Place drained noodles in a large bowl, top with vegetables, add miso broth. Garnish with sliced green onions.
