Home Made Veggie Broth

Ingredients: 1-2 cloves garlic 1/2 onion, coarsely chopped 1 carrot chopped 1-2 stalks celery, chopped 1/2 leek, sliced 1 small tomato, chopped 3-4 mushrooms, sliced 1-2 TBS fresh Chinese parsley small slice fresh ginger 2 green onions, sliced 1-2 TBS vegetable oil salt and pepper to taste 6-8 cups water

Instructions:
Heat the oil in a soup pot, fry the leek, onion, garlic celery, carrot, mushrooms until slightly browned. Add remaining ingredients, add water, bring to a boil, reduce heat, cover and simmer for 45 minutes.

Strain the broth and use in soups and cooking.
