Choy Sum Noodle Soup

I use Sun brand saimin noodles, which you can get at any local grocery store. They are fresh and cook in about 2 minutes in boiling water. For the chicken broth I use the powdered "Chicken" style broth sold in small bags at Down To Earth.

Ingredients:
  • 1 serving Sun brand saimin noodles
  • 2 TBS peanut oil
  • 1 tsp minced garlic
  • 1 tsp minced ginger
  • about 1/3 bunch of choy sum, (several cups) chopped
  • 2 1/2 cups water
  • several spoonfuls of veggie chicken broth
  • chopped green onions for garnish
  • Instructions:
    1. Cook the saimin noodles in boiling water for 2-3 minutes, drain and place in a large bowl.
    2. In another pan heat the water and veggie broth to boiling, then back off.
    3. In a wok or non stick pan heat oil, add ginger and garlic and choy sum and stir fry for several minutes until the choy sum is bright green and tender.
    4. Combine choy sum, broth and noodles. Top with chopped green onions.
