Pureed Fresh Fruit Parfait

Dick Allgire has a special guest to create a creamy fruit dessert.

Filling Ingredients:
  • 1 ½ cups Fresh Peaches or other seasonal fruit (I think Mark used mangos here)
  • 1 cup of almonds, soaked 6-8 hours, then peeled
  • ½ cups dates
  • 1 Tbs Almond Butter, raw
  • Pinch Cinnamon Powder
  • Pinch Cardamom Powder
  • Pinch Nutmeg, ground
  • Coconut water or fresh fruit juice to desired consistency
  • Topping Ingredients:
  • ¼ cup pecans
  • 3 small dates, pitted
  • 1 tsp coconut, shredded
  • pinch nutmeg, ground
  • Instructions:
    1. Place filling ingredients in blender or food processor and process until smooth. Pour into 2 parfait glasses. The strength of the blender will determine how much liquid is required to reach a smooth consistency.
    2. Place nuts in food processor and pulse chop.Add dates and coconut and pulse process until chopped well. Sprinkle on top of filling and enjoy. Dust with a pinch of nutmeg.
