Dick Allgire has a special guest to create a creamy fruit dessert.
Filling Ingredients: 1 ½ cups Fresh Peaches or other seasonal fruit (I think Mark used mangos here) 1 cup of almonds, soaked 6-8 hours, then peeled ½ cups dates 1 Tbs Almond Butter, raw Pinch Cinnamon Powder Pinch Cardamom Powder Pinch Nutmeg, ground Coconut water or fresh fruit juice to desired consistencyTopping Ingredients: ¼ cup pecans 3 small dates, pitted 1 tsp coconut, shredded pinch nutmeg, groundInstructions: - Place filling ingredients in blender or food processor and process until smooth. Pour into 2 parfait glasses. The strength of the blender will determine how much liquid is required to reach a smooth consistency.
- Place nuts in food processor and pulse chop.Add dates and coconut and pulse process until chopped well. Sprinkle on top of filling and enjoy. Dust with a pinch of nutmeg.
