I got the clay pot for 9 bucks at a small Chinese store in Chinatown. The "gluten" is otherwise known as Seitan. It is meat made from wheat gluten and you get this already made at Down To Earth fridge section.

Ingredients:
  • 1/4 cup sliced gluten
  • 1 cup fried firm tofu, cut into 1 inch pieces
  • 1/4 cup mushrooms, sliced
  • 1/4 cup kidney beans
  • 2 TBS green peas
  • 1 TBS minced ginger
  • 2 tsp minced garlic
  • 2 TBS vegetable oil
  • 1-2 TBS Maggi sauce *
  • 1 TBS sugar
  • 2 tsp soy sauce
  • 1 cup vegetable broth
  • 2 fresh chillies seed and cut into strips
  • sweet basil leaves for garnish
  • Instructions:
    1. In a wok, fry garlic in vegetable oil until golden. Mix in the gluten, tofu, mushrooms, kidney beans, green peas, and ginger. Stir fry for 1 minute.
    2. Add veggie broth and season with Maggi, sugar and soy sauce. Remove from stove.
    3. Pour mixture into clay pot and cover. Simmer over low heat for 20 minutes. Garnish with chilies and basil. Serve with jasmine rice.

*I have made this to test it about 3 times. The Maggi sauce is available at Asian markets. It has a rather strong taste. I liked this dish better when I used light soy sauce instead of Maggi, and 1 TBS instead of 2.
