Orzo with Macadamia Nuts

From Maui Vegetarian Cooking with Aloha.

Ingredients:
  • 1 lb. cooked Orzo. (I used about a cup of orzo and I cooked it for 10-11 minutes. Directions called for 6, but it was not quite done in that time.)
  • 1 TBS extra virgin olive oil
  • 1/4 cup Macadamia nuts, chopped fine (I used about 1 / 3 cup)
  • A handful of parsley, chopped
  • Parmesan cheese alternative (found at Down To Earth Dairy case)
  • Salt and pepper to taste
  • Instructions:
    1. Toast mac nuts in olive oil until lightly browned, about a minute.
    2. Add garlic, cook another minute.
    3. Add cooked and drained orzo. Toss to coat.
    4. Garnish with parsley, salt and pepper and Vegan Parmesan.
