Orzo with Macadamia Nuts

From Maui Vegetarian Cooking with Aloha.Ingredients: 1 lb. cooked Orzo. (I used about a cup of orzo and I cooked it for 10-11 minutes. Directions called for 6, but it was not quite done in that time.) 1 TBS extra virgin olive oil 1/4 cup Macadamia nuts, chopped fine (I used about 1 / 3 cup) A handful of parsley, chopped Parmesan cheese alternative (found at Down To Earth Dairy case) Salt and pepper to taste Instructions:
- Toast mac nuts in olive oil until lightly browned, about a minute.
- Add garlic, cook another minute.
- Add cooked and drained orzo. Toss to coat.
- Garnish with parsley, salt and pepper and Vegan Parmesan.
