Thai Stir Fry Veggie Pork with Green Beans

I used "Gimme Lean" sausage style found in the fridge section at Down To Earth.

Ingredients:
  • 1/2 pound green beans, trimmed
  • 1/4 cup roasted red bell pepper
  • 2 cloves garlic, chopped
  • 1 TBS soy sauce
  • 1/2 TBS fresh ginger, chopped
  • 1/2 TBS sugar
  • 1/2 TBS mild paprika
  • 1/2 tsp salt
  • chili paste to taste (1/2 tsp to 1/2 TBS if you like spicy)
  • 1 TBS vegetable oil
  • 1/2 package (roll) of Gimme Lean sausage style
  • 1–2 TBS water
  • 1 TBS fresh basil, chopped
  • 1 TBS fresh mint, chopped
  • 1–2 TBS dry roasted peanuts, chopped
  • Instructions:
    1. Cook green beans in a large pot of boiling water for 1–2 minutes. Drain, and rinse under cold water then set aside.
    2. Combine bell pepper, garlic, soy sauce, ginger, sugar, paprika, salt, and chili in a blender and mix to a smooth paste.
    3. Heat oil in a large non stick pan or wok over medium high heat. Add the veggie sausage and stir fry, breaking it into smaller and smaller ground pork size pieces with the edge or a spatula. When it is broken up and browned add the beans and a TBS or two of water. (You might want to add a bit more oil, because the veggie sausage has very little fat.)
    4. Cover to steam for a minute or two to make sure beans are tender.
    5. Add the puree spice mix and stir to mix. Cook for one more minute.
    6. Mix the basil, mint and garnish with peanuts.
    7. Serve with jasmine rice.
