Black Bean Patties

From the book "Maui Vegetarian- Cooking with Aloha" available at Down To Earth.

Ingredients:
  • 1 can black beans or 8 ounces dry black beans, cooked
  • 1 TBS chopped garlic
  • 1/2 green bell pepper, chopped fine
  • 1 TBS cumin
  • 1/2 onion, chopped fine
  • 2 TBS cilantro, chopped
  • 1 TBS green onion, minced
  • 1/4 cup bread crumbs
  • 1 TBS chili powder
  • flour
  • Ingredients:
    1. Combine all ingredients in a food processor (or mash with a potato masher or fork) until it binds. Add a little flour at a time, if necessary.
    2. Form into patties and use a bit more flour to coat the patties.
    3. Brown in olive oil in skillet over medium heat.

    Note: Ruby and I made these into veggie burgers, with whole grain buns, sliced tomato, Vegenaise, lettuce, and catsup. We also added a couple tablespoons of Ener-G egg replacer to help them bind. The book suggests serving with avocado salsa.
