Ingredients:
  • 3 cups of fennel, thinly sliced
  • 1/4 cup chopped parsley
  • 1 yellow pepper, diced
  • 1 celery rib, diced
  • 1/2 avocado, diced
  • 2 Tbs. olive oil
  • 6-8 sun dried tomatoes, soaked and chopped
  • Instructions:

  • Soak the sun dried tomatoes in advance for at least one hour. Mix all of the ingredients and be prepared for something delicious!
