Vinaigrette Dressing with Extra Virgin Olive Oil

Extra "Lite" olive oil has just as much fat (100%) as Extra Virgin oil, so use extra virgin. It has more flavor, more antioxidants.

Ingredients:
  • 1 tsp salt
  • 1/2 tsp dry Italian seasoning (I get this in the bulk spice section at Down To Earth. That way you can buy a small amount for a few cents and it is always fresh.)
  • 1 1/2 tsp dijon mustard
  • 1-2 cloves garlic minced
  • 3 TBS white wine or red wine vinegar
  • 6 TBS Extra Virgin Olive oil
  • Instructions:
    Combine all ingredients in a small bowl and whisk, or I just put it all in the blender and let electricity do the work.
