Hearts Of Palm Salad

They always have canned hearts of palm on the condiments shelf at Down To Earth. Rinse them well before using.

Dressing Ingredients:
  • 1/4 cup rice wine vinegar
  • 1/4 cup chopped cilantro
  • 2 TBS soy sauce
  • 1 tsp sesame oil
  • 1 tsp powdered wasabi
  • 1/4 tsp red pepper flakes
  • Instructions:
  • Combine ingredients in a small bowl and whisk.
  • Salad Ingredients:
  • 1 ripe avocado, sliced
  • 1 14-ounce can hearts of palm, rinsed
  • 2-4 TBS flour, seasoned with salt
  • Veggie Chicken (I used the veggie "chicken" drumsticks from the freezer at Down To Earth. I took three of them, sliced them and lightly pan fried them.)
  • 1 small head butter lettuce
  • Instructions:
  • Slice the hearts of palm lengthwise, then dredge them in flour. Fry them in a non stick skillet with a bit of vegetable oil several minutes, until they are golden brown. Remove from heat, set on paper towel, allow to cool.
  • Arrange butter lettuce leaves on a plate. Add the avocado slices, top with the sliced veggie chicken, and then the fried hearts of palm. Drizzle the dressing on top and enjoy.
