Homemade Miso Ramen

Soup Broth Ingredients:
  • 1 1/2 TBS light miso
  • 2 TBS soy sauce
  • 1/8 tsp Hondashi (this is not a vegetarian item)
  • 1 1/2 TBS nutritional yeast flakes (get this at bulk food bins at Down To Earth)
  • 1/2 tsp roasted garlic (get this at Asian market or Asian food aisle)
  • 1 tsp "Buttery Sticks" margarine (This is no trans fat margarine found at Down To Earth)
  • 2 cups veggie chicken broth
  • Combine all ingredients in a pan and bring to a simmer, stirring to blend.

    Toppings:
    Your choice of vegetables. I used baby bok choy, 1/2 package chop suey mix, sliced carrots. Saute in peanut oil briefly.

    Instructions:
    1. Cook one serving Sun Brand Saimin Noodles in boiling water for 3-4 minutes.
    2. Drain and put in a large bowl.
    3. Pour on the broth mixture, add the cooked vegetables.
    4. Garnish with slices of roasted nori and sliced green onions.
