These look as good as they taste!
Ingredients: Tomato tortillas (or wraps) get these at any supermarket Romaine lettuce, chopped thin Swiss chard, steamed until tender (remove stems) and chopped Vegenaise (Healthy mayo found at Down To Earth) Cherry tomatoes, sliced Olives sliced Sunflower seeds or tamari pumpkin seeds Clover sprouts *Vinaigrette dressing asparagus spears Hamakua mushroomsInstructions: - Coat the asparagus spears and mushrooms with olive oil and grill until cooked but still firm. Set aside for final garnish.
- Warm a tortilla, lay it on a working surface and spread a couple tablespoons of Vegenaise on it.
- Lay some of the swiss chard, then some shredded romaine lettuce. Add some sliced or grated carrot. Add a few slices of tomato, olives, veggie bacon bits, tamari pumpkin seeds (or sunflower seeds), and sprouts. Top with a bit of vinaigrette, then roll everything into a tight wrap.
- Cut into 1 1/2 inch sections. Arrange the rolls and stick an asparagus spear in each one, then top with a slice of grilled mushroom.
*Vinaigrette Recipe: 3 TBS white wine vinegar 6 TBS extra virgin olive oil 1-2 cloves garlic, minced 1 tsp salt 1 1/2 tsp Dijon mustard fresh ground pepperBlend all ingredients in a blender.
