Spruced Up Black Bean Soup

I got two cups of "Fantastic Big Soup Jumpin' Black Bean at the dry soup aisle at Down To Earth. We added some fresh vegetables to make it taste homemade. It turned out really good.

Ingredients:
  • 2 cups Fantastic Jumpin' Black Bean Soup (This recipe also works with "Fantastic Cha Cha Chili.")
  • 1 TBS vegetable oil
  • 1/2 cup diced onion (about half an onion)
  • 1/2 cup diced carrot ( small carrot)
  • 1/2 cup diced celery (one small stalk)
  • 1/2 cup frozen corn (thawed)
  • 1/2 can 15-ounce can crushed tomatoes
  • Instructions:
    1. Saute onion, carrot, and celery in oil in a soup pan. When vegetables are soft, add corn.
    2. Fill both containers of soup to the line (per package directions) with water and put the water and soup mix in your pot.
    3. Add the crushed tomatoes. Stir well, bring to a boil, turn down heat, cover and let sit for 6-8 minutes.
    4. Season to taste with salt and pepper and chili.
