Veggie Sausage and Mushroom Pasta

I got the "Gimme Lean" sausage and the Earth Balance margarine (no trans fat) at the refrigerator section at Down To Earth.

Ingredients:
  • 1 TBS Earth Balance "Buttery Sticks"
  • 1 TBS olive oil
  • 1/3 to 1/2 package (about 7 ounces) Gimme Lean Sausage
  • 1/2 pound mushrooms, sliced
  • 2 cloves garlic, minced
  • salt and pepper to taste
  • pinch of dry Italian Seasoning
  • 1/4 cup dry white wine
  • 1 1/2 cup your favorite spaghetti sauce (or canned Italian plum tomatoes, crushed)
  • 1/2 box Barilla thin spaghetti
  • Instructions: Saute the "sausage" in margarine and olive oil. Break it up into small pieces with a spatula, and brown it slightly.

    Add mushrooms, garlic, salt and pepper, Italian seasoning. Brown mushrooms.

    Add wine, mix well.

    Add tomato sauce and heat through.

    Cook pasta per package directions, drain in a colander and mix with sauce.

    Add red chili pepper flakes for seasoning to taste.
