2005 Ingredients: Cut the top off the head of garlic. Pour the olive oil over the top, sprinkle with thyme. Simmer in vegetable broth for 20 minutes, until soft.Peel and halve the potatoes, then bring to a boil in salted water, simmer for about 15 minutes until soft. Mash in a large bowl, adding about a tablespoon of the softened garlic. Then add the margarine, soy milk, salt. Mix well until smooth. Garnish with paprika. Top with gravy.
