Good way to start the day or even for lunch or dinner.

Scrambled Tofu:
  • 1 TBS oil
  • 2 green onions, chopped
  • 1 cup sliced mushrooms
  • 1/4 green pepper, diced
  • 1 cup tofu, crumbled
  • 1/2 tsp turmeric
  • 1/4 tsp garlic powder
  • 1/8 tsp cumin
  • 1 TBS soy sauce
  • salt and pepper to taste
  • Instructions:

    Saute onions, mushrooms, and bell pepper for 2 -3 minutes. Add remaining ingredients and cook 3 -5 minutes.

    Bean Mix:
  • 1 TBS oil
  • 1/2 onion diced
  • 1 clove garlic, minced
  • 1 can rinsed drained black beans
  • 1/4 tsp cumin
  • 1/2 TBS chili powder
  • salt and pepper to taste
  • Instructions:

    Saute onion and garlic until soft, add beans and spices and cook until beans get soft and blended with spices.

    Take a large warmed flour tortilla, spoon on some of the bean mixture, then add some of the scrambled tofu. Top with green salsa. Roll up and enjoy.
