Good way to start the day or even for lunch or dinner.
Scrambled Tofu: 1 TBS oil 2 green onions, chopped 1 cup sliced mushrooms 1/4 green pepper, diced 1 cup tofu, crumbled 1/2 tsp turmeric 1/4 tsp garlic powder 1/8 tsp cumin 1 TBS soy sauce salt and pepper to tasteInstructions:Saute onions, mushrooms, and bell pepper for 2 -3 minutes. Add remaining ingredients and cook 3 -5 minutes.
Bean Mix: 1 TBS oil 1/2 onion diced 1 clove garlic, minced 1 can rinsed drained black beans 1/4 tsp cumin 1/2 TBS chili powder salt and pepper to tasteInstructions:Saute onion and garlic until soft, add beans and spices and cook until beans get soft and blended with spices.
Take a large warmed flour tortilla, spoon on some of the bean mixture, then add some of the scrambled tofu. Top with green salsa. Roll up and enjoy.
