Peasant Broccoli and Bread Soup

Adapted from a Molto Mario recipe on the Food Network.

Ingredients:
  • 6 cups water
  • 3/4 pound broccoli, cut into small pieces
  • 1 TBS salt
  • 4 slices day old bread, cut into cubes (use good bread- I used Kalamata Olive Loaf from Down To Earth)
  • 3 TBS olive oil (Plus more for garnish)
  • 3 cloves garlic, sliced thin
  • Soy Cheese and Soy Parmesan for garnish
  • Instructions:
    1. Cook the broccoli in well salted boiling water until tender, about 10 minutes.
    2. In a large pan, heat olive and cook garlic until golden.
    3. Add bread, then broccoli and the broccoli cooking water. Simmer a few minutes until bread gets soft and soup gets good consistency.
    4. Ladle into bowls and add grated soy cheese, add soy parmesan, and a drizzle of extra virgin olive oil. Salt and pepper to taste.
