Peasant Broccoli and Bread Soup

Adapted from a Molto Mario recipe on the Food Network.Ingredients: 6 cups water 3/4 pound broccoli, cut into small pieces 1 TBS salt 4 slices day old bread, cut into cubes (use good bread- I used Kalamata Olive Loaf from Down To Earth) 3 TBS olive oil (Plus more for garnish) 3 cloves garlic, sliced thin Soy Cheese and Soy Parmesan for garnish Instructions:
- Cook the broccoli in well salted boiling water until tender, about 10 minutes.
- In a large pan, heat olive and cook garlic until golden.
- Add bread, then broccoli and the broccoli cooking water. Simmer a few minutes until bread gets soft and soup gets good consistency.
- Ladle into bowls and add grated soy cheese, add soy parmesan, and a drizzle of extra virgin olive oil. Salt and pepper to taste.
