Spicy Thai Veggie Beef and Rice

I adapted this from a recipe found on a package of Jasmine rice. I substituted Yves veggie ground round for the beef, which is a whole lot better for you than greasy hamburger.Ingredients: 2 TBS vegetable oil 3/4 pound Yves Ground Veggie Round (This is found a Safeway or Down To Earth) 1 medium onion, chopped 2 cloves garlic, minced 1/2 tsp chili paste or crushed red pepper (more or less to taste) 2 carrots, sliced thin 3/4 cup jasmine rice (uncooked) 2 TBS soy sauce 1 1/2 cups water 1/3 cup fresh mint chopped 1/3 cup fresh cilantro chopped Instructions:
- In a large frying pan heat the oil and saute the onion. Add the garlic and onions and continue to cook. Add red pepper. Season with salt and pepper.
- Add veggie ground round. Stir in the rice, add soy sauce and add the water.
- Bring to boil the turn down to low, cover and simmer for 20 minutes. Garnish with mint and cilantro and serve.
