Spicy Thai Veggie Beef and Rice

I adapted this from a recipe found on a package of Jasmine rice. I substituted Yves veggie ground round for the beef, which is a whole lot better for you than greasy hamburger.

Ingredients:
  • 2 TBS vegetable oil
  • 3/4 pound Yves Ground Veggie Round (This is found a Safeway or Down To Earth)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1/2 tsp chili paste or crushed red pepper (more or less to taste)
  • 2 carrots, sliced thin
  • 3/4 cup jasmine rice (uncooked)
  • 2 TBS soy sauce
  • 1 1/2 cups water
  • 1/3 cup fresh mint chopped
  • 1/3 cup fresh cilantro chopped
  • Instructions:

    1. In a large frying pan heat the oil and saute the onion. Add the garlic and onions and continue to cook. Add red pepper. Season with salt and pepper.
    2. Add veggie ground round. Stir in the rice, add soy sauce and add the water.
    3. Bring to boil the turn down to low, cover and simmer for 20 minutes. Garnish with mint and cilantro and serve.
