These different ingredients come together to make something special.
Dough Ingredients: 1/2 teaspoon dried yeast 1/2 cup warm water 1 1/2 cups flour, plus more for rolling out dough (healthier version 1 / 2 cup whole wheat flower mixed with 1 cup regular flour) 1 TBS honey or sugar 1 TBS extra-virgin olive oil Salt and pepper Filling Ingredients: 3 TBS extra-virgin olive oil, plus more for the pan and drizzling the crust 1 pounds leek, very thinly sliced (two large leeks) 1 1/2 tablespoons soy or rice milk 1/2 teaspoon sugar 1/2 cup artichoke hearts, sliced thin 1/4 cup pitted black olives, chopped 2–3 TBS finely chopped parsley 1/2 cup spaghetti sauce or canned tomatoes, coarsely chopped 1/4 cup golden raisins, soaked in hot water to plump 1/2 teaspoon sugar Instructions: - Combine yeast and water in a large bowl. Add flour, olive oil, honey, and salt and pepper.
- Work the dough with your hands. Transfer to a lightly floured board and knead until it just loses its stickiness. Set aside, covered with a damp cloth.
- Warm 3 TBS olive oil in a saute pan over medium-low heat. Add the leeks and cook gently about 10 minutes, or until soft but not browned. Add the soy milk and cook 5 additional minutes.
- Stir in sugar and cook another 5 minutes. The leeks should be very soft.
- Add the artichoke hearts, black olives, parsley, and tomatoes. Stir to mix well and continue cooking until the sauce is thick and liquid has evaporated. Remove from heat and stir in raisins.
- Lightly oil a 12-inch pizza pan. Roll the dough out into the shape of a pizza.
- Spread the filling evenly across one half of the dough, leaving a 1-inch border around the edges. Fold over to form a half circle and roll the edges of the two pieces of dough together.
- Brush the remaining oil over the top crust, sprinkle with sugar, prick in several places with a fork, and set aside for 30 minutes.
- Preheat the oven to 450 degrees F.
- Bake in the oven for 15 minutes, then turn the heat down to 350 degrees and bake another 15 minutes. Serve hot or at room temperature.
