Hamburger Helper On Polenta

This is a comfort dish using something you may not have used before. Serve with a green salad a French bread.

Ingredients:
  • 2 TBS olive oil
  • 1 large onion, cubed
  • 8 ounces sliced mushrooms
  • 1 12-ounce package of ground soy meat (you can get this at most grocery stores these days)
  • 1 cup tomato sauce
  • 1 tsp dry oregano
  • 1/2 tsp garlic powder
  • salt and pepper to taste
  • 1 1-pound tube precooked polenta

    Instructions:
    1. Heat oil in a large skillet over medium heat. Saute onion 5 minutes until golden.
    2. Add mushrooms and soy burger, and saute 5 minutes more, until mushrooms are soft and soy meat browns a bit.
    3. Add tomato sauce, oregano, garlic powder, salt and pepper, reduce heat to low and heat mixture.
    4. Slice polenta into 12 equal pieces. Spray another non-stick skillet with cooking spray and cook slices over medium heat until golden. Turn and cook the other side.
    5. Remove polenta and place two slices on individual plates, top with soy meat mixture and serve.
