This is a comfort dish using something you may not have used before. Serve with a green salad a French bread.
Ingredients: 2 TBS olive oil 1 large onion, cubed 8 ounces sliced mushrooms 1 12-ounce package of ground soy meat (you can get this at most grocery stores these days) 1 cup tomato sauce 1 tsp dry oregano 1/2 tsp garlic powder salt and pepper to taste 1 1-pound tube precooked polenta
Video: Watch Cooking DemonstrationInstructions: - Heat oil in a large skillet over medium heat. Saute onion 5 minutes until golden.
- Add mushrooms and soy burger, and saute 5 minutes more, until mushrooms are soft and soy meat browns a bit.
- Add tomato sauce, oregano, garlic powder, salt and pepper, reduce heat to low and heat mixture.
- Slice polenta into 12 equal pieces. Spray another non-stick skillet with cooking spray and cook slices over medium heat until golden. Turn and cook the other side.
- Remove polenta and place two slices on individual plates, top with soy meat mixture and serve.
