Homemade Seitan

You can get Vital Wheat Gluten at any health food store, in the bulk food bins next to flour.

Ingredients:
  • 1/2 cup unbleached white flour
  • 1 3/4 cups vital wheat gluten
  • 1/2 tsp salt
  • 1/2 tsp onion powder
  • 1 and 1/2 cups cold water
  • 2 quarts vegetable broth, mixed with 1 / 4 cup soy sauce, 1 tsp sesame oil, 1/2 tsp ginger powder (or a little bit of minced fresh ginger).
  • Instructions:
    1. Mix flour, gluten, salt and onion powder. Add water and mix with your hands into a firm dough. Allow dough to rest 15 minutes.
    2. Knead dough again with your hands for about a minute. Allow to rest another 5-15 minutes.
    3. After second rest period knead again, but dig your fingers into center and pull away to make it like a big donut. Use a knife to cut inch thick rounds.
    4. Have the broth, soy sauce, sesame oil and ginger boiling in a big pot. Toss the medallions in, cover and reduce to medium and boil for at least 20 minutes. Remove medallions and let cool. You can now slice and pan fry in oil and black bean sauce, or use in place of meat in recipes.

    *These can be frozen and thawed for later use.
