Creamy Tomato Tortilla Soup

This recipe was published by Eden Kitchens (using Eden ingredients) and is an amazing, really fast and easy recipe. You can whip this up in 5 minutes with a blender and a saucepan.

Ingredients:
  • 2 cans diced tomatoes with green chilies
  • 1 can Navy or Cannellini (white kidney beans)
  • 1/2 cup soy milk
  • 3/4 tsp salt
  • 1/8 tsp black pepper
  • 2 TBS fresh parsley or cilantro, minced
  • 2 cups tortilla strips (or chips)
  • Instructions:

    Place beans and tomatoes in a blender and puree until creamy. Pour into a medium saucepan, add salt and soy milk. Turn the heat to medium, stirring frequently and bring almost to a boil. Reduce and simmer 5 minutes. Ladle into serving bowls and garnish with parsley or cilantro, and tortilla chips.
