Tomato-Corn Salsa
  • 4 ripe plum tomatoes, diced
  • 1 small white onion, diced
  • 1 cup canned corn kernels
  • 1 tsp sugar
  • 1 tsp hot sauce
  • 1 tsp salt
  • Guacamole
  • 2 ripe avocados
  • 1 small onion, minced
  • 1 clove garlic, minced and mashed with 1/2 tsp salt
  • 4 tsp fresh lime juice
  • 1/2 tsp cumin
  • 1 fresh or pickled jalapeno chili, minced
  • 3 TBS chopped cilantro
  • Hot Dogs
  • 1 tsp oil
  • 6 vegetarian hot dogs
  • 6 buns
  • 3 oz. shredded vegan cheese
  • Instructions:
    1. Make tomato-corn salsa by gently mixing ingredients in a bowl. If there's too much liquid, drain.
    2. Make guacamole. Peel and slice avocados. Place in a bowl, mash with fork, and stir in remaining ingredients.
    3. Heat hot dogs by pan frying in oil, place them in buns.
    4. Spread guacamole along each dog, leaving ends exposed. Spoon tomato-corn salsa over center, sprinkle with cheese. Garnish with parsley and enjoy.
