Barcelona Dogs

From Vegetarian Times April 2005 issue.Tomato-Corn Salsa 4 ripe plum tomatoes, diced 1 small white onion, diced 1 cup canned corn kernels 1 tsp sugar 1 tsp hot sauce 1 tsp salt Guacamole 2 ripe avocados 1 small onion, minced 1 clove garlic, minced and mashed with 1/2 tsp salt 4 tsp fresh lime juice 1/2 tsp cumin 1 fresh or pickled jalapeno chili, minced 3 TBS chopped cilantro Hot Dogs 1 tsp oil 6 vegetarian hot dogs 6 buns 3 oz. shredded vegan cheese Instructions:
- Make tomato-corn salsa by gently mixing ingredients in a bowl. If there's too much liquid, drain.
- Make guacamole. Peel and slice avocados. Place in a bowl, mash with fork, and stir in remaining ingredients.
- Heat hot dogs by pan frying in oil, place them in buns.
- Spread guacamole along each dog, leaving ends exposed. Spoon tomato-corn salsa over center, sprinkle with cheese. Garnish with parsley and enjoy.
