Thai Pineapple Fried Rice

Ruby had never heard of putting pineapple in fried rice, but this is a popular dish in Thailand.Ingredients: 2 TBS olive oil 6 ounces of tofu, (about a cup) chopped Freeze and then thaw the tofu to give it a chewy texture. 1 tsp garlic 2 TBS raisins 2 TBS cashews 2 TBS oyster sauce (Vegetarian version available at Down To Earth) 1 tsp soy sauce 1/2 cup sliced carrot 1 TBS sugar 1 TBS curry powder 3 cups jasmine rice (Cook the rice ahead of time: Combine 1 cup rice with 1 1 / 2 cup water a dash of salt. Bring to soft boil, cover and simmer 12 minutes. Cool the fridge over night.) 3/4 cup pineapple chunks (cut bite sized) 1/2 onion, sliced sliced green onion, for garnish chopped fresh cilantro, for garnish Instructions:
- Heat oil in a large wok or non-stick pan. Add onion, carrots and stir fry several minutes.
- Add garlic, continue to stir fry.
- Add curry powder, Mix well.
- Add tofu and stir. Add raisins and cashews, continue to stir fry.
- Add sugar, continue stirring. Add rice and mix well. Continue cooking until heated through.
- Add oyster sauce and soy sauce. Mix well to coat rice completely.
- Garnish with green onions and cilantro.
