Orzo and Sweet Pea Pilaf

Orzo is pasta that looks like rice. It is great in one-pot dishes.Ingredients: 1TBS olive oil 1 medium yellow onion, chopped 2–3 cloves garlic, minced 1 cup long grain white rice 1/2 cup orzo (I get this in bulk bins at Down To Earth) 1/2 tsp salt 1/2 tsp black pepper 1/4 tsp turmeric 2 3/4 cups water 1 cup green peas, fresh or frozen 1/2 cup chopped pimentos 2 TBS chopped fresh parsley Instructions:
- In medium saucepan, heat oil over medium heat. Add the onion and garlic, and cook stirring for 4 minutes.
- Stir in the rice, orzo, salt and pepper, and turmeric and cook for 1 minute over low heat, stirring frequently. Add water, green peas, and pimientos, and bring to a simmer over medium high heat.
- Stir the grains, cover and cook over low heat until grains are tender, about 15–20 minutes.
- Remove from heat, fluff the grains, and blend in the parsley. Let stand 5 minutes or more before serving.
