Orzo and Sweet Pea Pilaf

Orzo is pasta that looks like rice. It is great in one-pot dishes.

Ingredients:
  • 1TBS olive oil
  • 1 medium yellow onion, chopped
  • 2–3 cloves garlic, minced
  • 1 cup long grain white rice
  • 1/2 cup orzo (I get this in bulk bins at Down To Earth)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp turmeric
  • 2 3/4 cups water
  • 1 cup green peas, fresh or frozen
  • 1/2 cup chopped pimentos
  • 2 TBS chopped fresh parsley
  • Instructions:
    1. In medium saucepan, heat oil over medium heat. Add the onion and garlic, and cook stirring for 4 minutes.
    2. Stir in the rice, orzo, salt and pepper, and turmeric and cook for 1 minute over low heat, stirring frequently. Add water, green peas, and pimientos, and bring to a simmer over medium high heat.
    3. Stir the grains, cover and cook over low heat until grains are tender, about 15–20 minutes.
    4. Remove from heat, fluff the grains, and blend in the parsley. Let stand 5 minutes or more before serving.
