Orzo and Sweet Pea Pilaf

Orzo is pasta that looks like rice. It is great in one pot dishes.

Ingredients:
  • 1 TBS olive oil
  • 1 medium yellow onion, chopped
  • 2–3 cloves garlic, minced
  • 1 cup long grain white rice
  • 1/2 cup orzo (I get this in bulk bins at Down To Earth)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp turmeric
  • 2 3/4 cups water
  • 1 cup green peas, fresh or frozen
  • 1/2 cup chopped pimentos
  • 2 TBS chopped fresh parsley
  • Directions:
  • In medium saucepan, heat oil over medium heat. Add the onion and garlic, and cook stirring for 4 minutes. Stir in the rice, orzo, salt and pepper, and turmeric and cook for 1 minute over low heat, stirring frequently. Add water, green peas, and pimientos, and bring to a simmer over medium high heat. Stir the grains, cover and cook over low heat until grains are tender, about 15 – 20 minutes.
  • Remove from heat, fluff the grains, and blend in the parsley. Let stand 5 minutes or more before serving.
